Yet another restaurant in Pilsen that serves mouth-watering
carnitas, Sabas Vega has been representing since 1966 with treats that pay homage to this former butcher shop. Like at many
carnitas restaurants in Pilsen, the dining area here is small and geared primarily for takeout, but there are a few tables and chairs for those looking to get off their feet for a spell. The staff of this family-owned shop are friendly and accommodating of all who walk through the door.
The carnitas at Saba Vega gleam with bits of pork fat and stewed-in seasonings and spices until the pork melts in your mouth. If carnitas is not on your radar, then the barbacoa tacos, saucier than you'll find elsewhere, will sate your hunger. However, if you fully want to enjoy the Sabas Vega experience, then come on a Saturday or Sunday and try out some specialties that aren't offered during the week. Birria de chivo (goat stew), touched with just enough chile to let you know it's there, is a knockout. Sabas Vega's menudo is a savory broth of tripe and vegetables that will make a vegetarian switch sides, if only for one day.
